Apple Raisin French Toast
- 1 1/4 c. cored and diced apple
- 2-3 tablespoons raisins, to your liking.
- (I use cranraisins)3 tbls.
- 6 slices bread
- Optional: 1 teaspoon sliced almonds or chopped walnuts and 2 teas. coconut (more or less)
- 3 large or extra large eggs, beaten with 1 tbls. milk and 1/4 teas. vanilla.
- 2 or more tablespoons of margarine or butter.
- Extra sugar, extra margarine or butter and pancake or maple syrup or one of your choice for topping (blueberry, strawberry, etc.)
- Whipped cream or confectioner's sugar, optional,
- Clean apple, core and dice. Mix apple with raisins or(cranraisins)and saute in 1 and a 1/2 tbls. melted margarine till apple is partially soft. If you want to add almonds or walnuts and coconut, you can do so at this point. Make sure everything is coated with the margarine or butter. Sprinkle about 1/2 teaspoon granulated sugar over this fruity mixture.
- Beat eggs, vanilla and milk with fork and coat both sides of the first three slices of bread. Take half of the fruity cooked mixture and set aside in a bowl for the next three slices of bread. Make sure your frying pan can accommodate 3 or 4 slices. Spread fruit mix over the bottom of your pan and keep your flame medium to low. Fry the french toast over the fruit mixture. When one side is toasted, take your spatula and turn everything over to continue frying till browned on other side. If bread is not frying well, add more margarine or butter, a teas. at a time. Continue cooking till browned.
- If sticky, clean pan after first batch and put the remaining fruit mix into pan. Heat this mix. a few minutes to melt the margarine/butter before adding egg-coated bread. Continue to fry and turn as before.
- Serve with a dollop of soft butter and sprinkle with confectioner's or regular sugar and/or syrup of your choice! Whipped cream - optional!
