Chili- Lime Grilled Shrimp
- Zest of one medium Lime
- Juice of one medium Lime
- 1 tbsp Garlic, minced
- 1 tbsp Chili Powder
- 2 tbsp chopped fresh Cilantro
- 1 large Chipotle Pepper in Adobo Sauce, finely chopped
- 2-3 tbsp Olive Oil
- Sea Salt & Fresh Cracked Pepper to taste.
- 2 lbs Large Shrimp, peeled and deveined
- 1 sm pkg 4" Bamboo Skewers soaked in water
- Combine first eight ingredients in a large bowl and stir to mix well.
- Add Shrimp and toss to coat.
- Cover and marinate Shrimp in refrigerator for 1-2 hours.
- Preheat grill to medium high heat. Prepare with seafood rack.
- Thread 2 Shrimp on each bamboo skewer.
- Grill Shrimp for 2-3 minutes per side. No more.
- Serve over steamed or Saffron Scented Rice.
