Guacamole

  1. Cut avacado's in half. (Gently tap the seed with the sharp edge of your knife so the edge sicks inside the seed a little. Give the seed a little twist while holding the knife handle, and it will pop right out.)
  2. Slice them again into fourth's, then peel the skins off. Cube the avacado, or just put it into the bowl whole. Add lime right away, so it doesn't turn brown. Add lemon, a little (I like mine tart). Finely chop half a sweet onion, and add to the bowl. Put in a little cayenne. Using a potato masher, fork or food processor, mix up the guacamole. Mix to your favorite consitency. (I like mine kinda lumpy, if you like it smooth use a processor.)At this time if you wanted to add salsa or fresh tomato you could. put in the garlic 1-3 tsps. mix in with a spoon. Let it sit for a little bit, then eat. Cayenne, salt and pepper to taste.
