Crab Omelet(Egg Fu Yung)

  1. Break eggs into a large bowl.
  2. Add crab meat, soy sauce, salt, pepper and cornstarch.
  3. Mix all ingredients well.
  4. Heat wok.
  5. Add 2 tablespoons oil.
  6. Stir-fry bamboo shoots and water chestnuts for 30 seconds.
  7. Add onion and celery for 1 1/2 minutes.
  8. Remove from wok and put aside to cool.
  9. Mix eggs.
  10. Add crabmeat mixture to vegetables.
  11. Mix well.
  12. Reheat wok and add 2 tablespoons oil of mixture (2 tablespoons each).
  13. Add oil if necessary.
