Crab Omelet(Egg Fu Yung)
- 7 eggs
- 1 c. flaked crab meat
- 1 Tbsp. soy sauce
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. cornstarch
- 4 Tbsp. oil
- 1 c. shredded bamboo shoot
- 1/2 c. shredded onion
- 1/2 c. shredded celery
- 1/2 c. finely chopped water chestnuts
- Break eggs into a large bowl.
- Add crab meat, soy sauce, salt, pepper and cornstarch.
- Mix all ingredients well.
- Heat wok.
- Add 2 tablespoons oil.
- Stir-fry bamboo shoots and water chestnuts for 30 seconds.
- Add onion and celery for 1 1/2 minutes.
- Remove from wok and put aside to cool.
- Mix eggs.
- Add crabmeat mixture to vegetables.
- Mix well.
- Reheat wok and add 2 tablespoons oil of mixture (2 tablespoons each).
- Add oil if necessary.
