Heavenly Jicama Toss
- 1 cup peeled jicama cut into 3" long matchstick slices
- 1 cup ripe fresh peaches, cut into slices (leave skin on)
- 1 cup mixed berries (if using large strawberries slice each berry in half)
- 1/2 cup of golden raisins
- 1/2 cup crumbled feta cheese
- 1/2 cup toasted pine nuts
- 1 16 oz. bag of baby spinach
- Dressing
- 1/4 cup of applesauce
- 3/4 cup orange juice
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- Prepare all salad ingrediants by giving them a complete cleaning . Disgard all bruised fruit. Prepare jicama, peaches and berries as directed. Add raisins. Mix together in a large bowl. Mix dressing ingrediants together in a separate bowl and pour 1/2 of dressing over fruit. Let stand maranating in the refrigerator for an hour. Arrange cleaned baby spinach on a decorative platter. Spoon fruit mixture over greens. Sprinkle cheese and pine nuts over fruit and spinach. Last, pour remaining dressing over the entire platter of salad.
