Anchovie Breadcrumb Pasta
- .5 Box Mezze Penne
- 8 small Roma tomatoes
- Salt
- Pepper
- 2 slices italian or sour dough bread
- Tomato paste (use sun-dried if possible)
- Garlic
- I can anchovies
- 1. Roast halved tomatoes covered in olive oil and a pinch each of salt and pepper at 450 F for 20-30 minutes.
- 2. Boil water, cook penne to almost al dente.
- 3. Toast bread ll the way through in oven at 450 F or use toaster on low for a few minutes. Place in food processor.
- 4. Place 2-3 tbs. of olive oil in saute pan. Saute anchovies on medium high until brown and no longer "fishy".
- 5. Add garlic and roasted tomatoes to saute pan.
- 6. Add tomato paste.
- 7. Drain pasta and add to saute pan.
- 8. Fold in bread crumbs and serve immediately.
