Grilled Lemon And Herb Corn On The Cob
- 4 ear of corn, husk removed,
- 2 lemons,
- zest of 2 lemons,
- fresh chives, rosemary or dill,
- coarse salt and pepper to taste.
- Take a piece of foil large enough to wrap 1 ear of corn tightly and lay it open. Zest the lemons and reserve. Take 1 lemon and slice into thin slices. Quarter the 2nd lemon. Lay 3-4 slices of lemon in a vertical line on the foil. Take a lemon quarter and rub the juices over the ear of corn. Place the corn on the lemon slices on the foil. Finely chop fresh herbs of your choice. Sprinkle them on top of the ear of corn. Sprinkle with 1/4 of the lemon zest. Finish with coarse ground salt and pepper. Tightly wrap the ear of corn and place on a medium high grill until just tender, about 12-18 minutes depending on size of corn and type of grill. When done, open foil pocket and enjoy, guilt-free!
