Campfire Asparagus

  1. Wash veggies - Cut Pepper into 1/4inch thick long strips
  2. Combine aspaprgus,red pepper, olive oile, garlic, salt, pepper in roasting pan and mix to coat thoroughly (can be done day before)
  3. Grill (blister) asparagus and red pepper on HOT open grill until you start to get black "blistered"spots (approx 5-7 minutes - turning as necessary not to burn)
  4. Place blistered veggies back into same roasting pan and on the grill and add butter / stir until butter melted and well coated
  5. Cover roasting pan with foil and leave on MEDIUM heat part of fire (or place in 350 deg. oven) for approx 7-8 minutes
  6. Remove from heat and let steam covered another 5 minutes
  7. uncover and drizzle lemon juice and sprinkle small amount of additional salt - Serve !
