Campfire Asparagus
- 2 bunches Asparagus - (one bunch for every 4 people)
- 2 Red Bell Pepper - (one pepper per asparagus bunch)
- 2 tablespoons Minced Garlic
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 1 lrg Juice of Lemon
- 4 tablespoons Butter (unsalted)
- 2-3 tablespoons Olive oil
- Wash veggies - Cut Pepper into 1/4inch thick long strips
- Combine aspaprgus,red pepper, olive oile, garlic, salt, pepper in roasting pan and mix to coat thoroughly (can be done day before)
- Grill (blister) asparagus and red pepper on HOT open grill until you start to get black "blistered"spots (approx 5-7 minutes - turning as necessary not to burn)
- Place blistered veggies back into same roasting pan and on the grill and add butter / stir until butter melted and well coated
- Cover roasting pan with foil and leave on MEDIUM heat part of fire (or place in 350 deg. oven) for approx 7-8 minutes
- Remove from heat and let steam covered another 5 minutes
- uncover and drizzle lemon juice and sprinkle small amount of additional salt - Serve !
