Blueberry Yum-Yum
- 1 cup flour (may want to slightly increase 1st 3 ingredients)
- 1 stick butter, softened
- 1 cup chopped nuts
- 8 oz. cream cheese, softened
- 2 cups sugar, divided
- 8 oz. frozen whipped topping, thawed
- 2 cups blueberries
- 1/4 cup cornstarch
- Preheat oven to 350. Mix flour, butter and nuts well. Press into a 9x13 baking dish. Bake for 20 minutes or until lightly browned. Let cool.
- Beat cream cheese with 1 cup sugar. Add whipped topping and mix until smooth, Spread on cooled crust.
- While crust is baking, combine blueberries and 1 cup sugar, and 1/2 cup water in saucepan and bring to boil. Reduce heat and simmer for 15 minutes. Mix cornstarch with 1/3 cup water, add to berries and cook until thick. Cool, then spread on top of cream cheese mixture.
- Refrigerate. Cut into squares to serve.
