Lemon Snowdrops

  1. Whip the butter until it's light and fluffy.
  2. Turn off the mechine and add the powdered sugar. Then turn back on again and mix for about 3 minutes.
  3. Mix in the lemon juice, zest, and extract.
  4. Add the flour and salt, mix until combined. Place in a low flat container and refrigerator overnight.
  5. To Bake: Preheat oven to 400u0b0
  6. Line Pans with parchment paper
  7. Using a 1 ounce scoop make balls and place them on the sheet pans. they can be relatively close as they don't spread much.
  8. Bake until the bottoms are just beginning to darken, 8-10 minutes.
  9. Remove from the oven , allow to sit for a few moments just to cool a little then sift generously with powdered sugar.
