Lemon Snowdrops
- 2 cups unsalted butter
- 1 cup powdered sugar + more for dusting
- 1 tablespoon lemon juice
- 4 cups flour
- 1 t salt
- zest of 5 lemons
- 1/2 teaspoon lemon extract
- Whip the butter until it's light and fluffy.
- Turn off the mechine and add the powdered sugar. Then turn back on again and mix for about 3 minutes.
- Mix in the lemon juice, zest, and extract.
- Add the flour and salt, mix until combined. Place in a low flat container and refrigerator overnight.
- To Bake: Preheat oven to 400u0b0
- Line Pans with parchment paper
- Using a 1 ounce scoop make balls and place them on the sheet pans. they can be relatively close as they don't spread much.
- Bake until the bottoms are just beginning to darken, 8-10 minutes.
- Remove from the oven , allow to sit for a few moments just to cool a little then sift generously with powdered sugar.
