Soulful Caribbean Pork -Made In Idaho :)
- 5 small pork loins (1-1.5lbs-picnic boneless)
- 14 medium Idaho potatoes
- 1 large sweet potato (yellow)
- 1 large carrot
- 2 green peppers
- 1 red pepper
- 1 orange pepper
- 1 large yellow onion
- 1 granny smith apple
- 8 links Basque Chorizo sausage
- 1 can tidbits pineapple
- 1/2 cup (or more) Sweet chili sauce
- dash garlic salt
- minced garlic
- dash ginger
- 1 bottle of KC Masterpiece Caribbean jerk- water
- 2 cups butter
- I use a big electric roaster. Cook and Carry!
- Set at 350-400 degrees (Set on roast )
- Melt butter
- Cube pork loins and brown.
- add:
- Cubed potatoes
- slivered sweet potato
- halved, sliced carrot
- diced peppers, onions, apple
- sliced Basque chorizo mix all together with:
- Dash of garlic salt and ginger to taste
- 2 TBspoon minced garlic
- 1/2 cup or more sweet chili sauce
- Pineapple (juice and all)
- Carribean jerk. Add water to jerk bottle and add to pan. Roast until meat and vegetables are done. Delicious on its own or served with rice and green onions
