Christmas Fruit Bread
- 2 yeast cakes or about 3 pkg. granulated yeast
- 3/4 c. white sugar
- 1 qt. lukewarm milk
- 4 well beaten eggs
- about 8 c. flour
- 1/2 tsp. each: cinnamon, nutmeg and anise seed
- 1/2 lb. butter
- 1 tsp. salt
- 1/2 c. orange peel
- 1/2 c. citron
- 1 tsp. almond extract
- 2 c. seeded raisins (white preferred)
- 1/2 c. chopped nuts
- Scald milk and cool to lukewarm.
- Add yeast cakes and 6 cups flour to make batter.
- Let rise.
- Add sugar, eggs, melted butter and salt.
- Cover fruit and nuts with flour and mix well.
- Fold into batter with other seasonings and flour.
- Knead to a stiff dough. Let rise until double in bulk, then cut and put in pans.
- Bake at 350u0b0.
- Makes 5 loaves.
- Brush loaves with butter when done and removed from pans.
- Cool and wrap.
