Curried Chicken With Apple, Raisins And Cashews
- 1 onion, finely chopped
- 2 tablespoons fresh garlic
- 2 inches fresh ginger, finely chopped
- 2 tablespoons oil
- 2 tablespoons butter
- 1/2 teaspoon salt
- Curry
- 1 can tomatoe paste
- 1 apple, chopped
- 1/2 cup raisins
- 1/2 cup cashews,chopped
- 1/2 cup sour cream
- 2 Tablespoons fresh cilantro, chopped for garnish
- Saute onions in butter and canola oil until translucent. Add chicken and cook on medium high for a couple of minutes, then add salt, garlic, ginger and curry spices, stir. Add 4 cups of chicken stock, apples and raisins.
- Stir occasionally, once boiling turn down to medium low until chicken is finished cooking. Remove from heat, add sour cream and nuts (reserving 2 tablespoons nuts for garnish)
- Garnish dish with chopped cilantro and nuts.
- Enjoy!
