Cranberry Almond Granola
- Cooking spray
- 2/3 c. apple juice, unsweetened from concentrate, thawed
- 1/2 c. maple syrup
- 1/3 c. canola or almond oil
- 1/4 c. dark drwon sugar, packed
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 5 c. rolled oats, not instant
- 1 c wheat germ, toasted
- 1 c. nuts coarsely chopped (almonds, walnuts
- 1/2 c sunflower seeds
- 1 c cranberries, dried
- 1. Cook in bottom 2/3 of oven. Preheat to 325. Coat pans with spray.
- 2. Whisk juice, syrup, oild and brown sugar in med saucepan. Bring to simmer over MH heat, stirring occassionally. Remove from heat and add salt and cinnamon.
- 3. Mix oats, germ, almonds and seeds in large bowl. Toss with juice moxture to coat.
- 4. Spread evenly on sheets.
- 5. Bake for 15 mins stirring 1 - 2 times. Reverse sheets top to bottom and fron to back. Continue baking until lightly browned and aromatic, stirring frequently, about 15 mins more.
- 6. Transfer baking sheets to wire racks, stir in cranberries. Let cool completely.
