Sweet Potato Supreme
- 3 lb. fresh raw sweet potatoes
- 3/4 c. softened butter
- 1 c. light brown sugar
- 1 tsp. cinnamon
- 1/2 ground cloves or allspice
- 1 Tbsp. grated orange rind
- 6 oz. frozen orange juice concentrate
- 1/2 c. chopped pecans
- 1 1/2 c. miniature marshmallows
- Boil sweet potatoes for about 35 minutes or until soft, cool, peel and slice for casserole.
- Cream together butter, sugar, cinnamon, cloves, orange rind and orange concentrate (the juice should be partially thawed).
- Arrange layers of sweet potato (half) in casserole; cover with 1/2 sugar-butter mixture.
- Add the remaining potatoes, top with all butter-sugar mixture.
- Place in heated oven at 350u0b0 until heated through; remove and sprinkle with chopped pecans and cover with marshmallows; return to oven and brown lightly.
- Watch closely as marshmallows burn quickly.
