Blueberry Muffins

  1. 1. Preheat oven to 375 deg F and spray muffin tins with nonstick spray.
  2. 2. Combine flour, baking powder, baking soda, salt, and sugar in a medium bowl. Set aside.
  3. 3. Melt butter in a small bowl. Set aside.
  4. 4. In a large bowl, beat the eggs. Add buttermilk, oil, and vanilla extract.
  5. 5. Slowly drizzle the melted butter into the buttermilk mixture, stirring constantly.
  6. 6. Add the dry ingredients into the wet, and mix until just combined.
  7. 7. Fold in the blueberries.
  8. 8. Spoon the batter into the muffin tins and sprinkle the tops with Turbinado sugar.
  9. 9. Bake mini muffins for about 15-17 minutes and the large muffins for 20-25 minutes.
