Sicilian Spinach Pie
- 2 Tbsp. oil
- 1 large coarsely chopped Spanish onion
- 2 lb. fresh pizza dough
- flour for the board
- 1 (10 oz.) pkg. fresh spinach, stemmed
- 1 c. grated fresh Parmesan cheese
- 1/2 c. pitted and finely chopped black olives in brine
- Set oven to 350u0b0.
- Have a 13 x 9-inch baking dish on hand.
- Use 1 tablespoon of olive oil to grease the pan.
- In pan, heat the remaining oil and saute onion over medium-low heat for 15 minutes. Add olives and saute an additional 5 minutes.
- Set aside.
- Cut dough in half and roll out a piece to fit the bottom and sides of the pan.
- Press into the pan.
- Sprinkle with 1/2 cup Parmesan cheese.
- Place uncooked spinach into Parmesan cheese.
- Scatter the onion/olive mixture over the spinach and sprinkle with remaining 1/2 cup of Parmesan cheese.
- Roll out remaining dough and place on top.
- Make 6 to 8 holes in top.
- Bake 30 to 35 minutes, until the crust is brown.
- Serve at once.
