Sicilian Spinach Pie

  1. Set oven to 350u0b0.
  2. Have a 13 x 9-inch baking dish on hand.
  3. Use 1 tablespoon of olive oil to grease the pan.
  4. In pan, heat the remaining oil and saute onion over medium-low heat for 15 minutes. Add olives and saute an additional 5 minutes.
  5. Set aside.
  6. Cut dough in half and roll out a piece to fit the bottom and sides of the pan.
  7. Press into the pan.
  8. Sprinkle with 1/2 cup Parmesan cheese.
  9. Place uncooked spinach into Parmesan cheese.
  10. Scatter the onion/olive mixture over the spinach and sprinkle with remaining 1/2 cup of Parmesan cheese.
  11. Roll out remaining dough and place on top.
  12. Make 6 to 8 holes in top.
  13. Bake 30 to 35 minutes, until the crust is brown.
  14. Serve at once.
