Lo-Cal Chicken Primavera
- 1 Tbsp. olive oil
- 1 lb. boneless chicken breasts, cut in chunks
- 2 c. sliced fresh mushrooms
- 1 medium onion, cut into chunks
- 1/2 c. green and red pepper, diced
- 1 garlic clove, minced
- 1/4 c. pitted ripe olives, cut in half
- 1 (16 oz.) can Italian-seasoned tomatoes or use regular canned tomatoes
- 1/2 tsp. sweet basil
- 1 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- dash of hot pepper sauce, if desired
- Heat oil in a large skillet.
- Add chicken, mushrooms, onion, green pepper and garlic.
- Cook, stirring occasionally, until chicken is cooked through and vegetables become soft.
- Add olives and tomatoes that have been broken into chunks.
- Add seasonings. Simmer mixture gently to partially reduce liquid.
- Serve over a bed of Italian Risotto or pasta of your choice.
- Serves 4.
