Lo-Cal Chicken Primavera

  1. Heat oil in a large skillet.
  2. Add chicken, mushrooms, onion, green pepper and garlic.
  3. Cook, stirring occasionally, until chicken is cooked through and vegetables become soft.
  4. Add olives and tomatoes that have been broken into chunks.
  5. Add seasonings. Simmer mixture gently to partially reduce liquid.
  6. Serve over a bed of Italian Risotto or pasta of your choice.
  7. Serves 4.
