Deep-Fried Battered Courgettes & Garlic Mayonaise
- 2 large. Courgettes
- 2 cup(s) Plain flour
- 2 Eggs
- 1 cup(s) Milk
- 2 tbsp(s) Mayonaise
- Garlic puree
- 1 tsp(s) Baking powder
- to taste Salt & ground black pepper
- Wash & cut the courgettes into batons,dip into seasoned flour.
- Using a plastic bowl & ballon whisk for the next step.
- Mix flour,eggs,baking powder & seasoning together. Add milk slowly & beat until batter is smooth. Dip the courgettes into the batter, let excess drip off.Shallowfry in a wok on medium heat turning
- them with a spoon(with holes in it).
- If you dont think there crispy enough finish off in a hot oven for 10 minutes while you mix the mayonaise with garlic puree to put into a ramikin(picture is above) for dipping the cougettes in.
- You can use aubergines,king prawns or mushrooms.My favourite is chicken & use a Tomato Ketchup dip.
