Spicy Salmon On Red Onions And Beans And Rice
- 2 lbs Salmon fillets
- 1 bunch fresh Cilantro
- 5 cloves of garlic
- 2 teaspoons Cumin powder
- 3 teaspoons Coriander powder
- 3 teaspoons Garam Masala (optional)
- 1 teaspoons Paprika
- 1/2 bunch Mint leaves
- juice from 1 lemon
- 1/2 cup slivered Almonds
- 1/2 cup Walnuts
- Salt to taste
- Pepper to taste
- 2 medium Red Onions
- Olive Oil for cooking
- 1/6 cup Butter
- 1) divide the salmon fillets into 6 oz each. season with salt and pepper
- 2) Marinade: In a blender blend together
- Cilantro, garlic, Cumin powder, Coriander powder, paprika, Garam Masala, mint, lemon juice, walnuts and olive oil (keep some olive oil to onto the bottom on the aluminium foil for baking) and salt
- 3) apply the marinade to the salmon. Add salt to taste. Marinate for about 30 minutes
- 4) Preheat the oven at 400 degrees
- 5) spread the remaining olive oil on the aluminium foil in the baking dish. Spread out the marinated salmon
- 6) bake for 15 minutes until the salmon flakes out
- 7) while the salmon is baking, chop the 2 red onions longwise and thin
- 8) add 3 teaspoons olive oil or butter to the pan and fry the red onions till brown (about 10 minutes). Add red pepper flakes to spice it up if you want
- 9) Cool the fried onions and put a serving dish
- 10) Remove the salmon from the oven
- 11) Place Salmon on fried onions and serve
- 12) You can serve with beans and rice or french bread or bruschetta
