Chocolate Chip Oatmeal Cookies
- 1/2 c. rolled oats (not instant)
- 1 tsp. salt
- 1 c. butter or margarine, softened
- 2 eggs
- 1 (12 oz.) pkg. semi-sweet chocolate chips
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1 1/2 c. firmly packed brown sugar
- 1 tsp. vanilla
- 1 c. chopped pecans
- Preheat oven to 350u0b0.
- In blender or food processor, process oats until coarse flour.
- In small bowl, combine ground oats, flour, salt and baking soda; set aside.
- In large mixing bowl with electric mixer on high, beat butter and brown sugar until light and creamy.
- Beat in eggs and vanilla until well combined. Gradually stir in flour mixture until combined.
- Stir in chocolate chips and pecans.
- Drop dough by scant 1/4 cupfuls onto ungreased baking sheets.
- Bake 15 to 18 minutes until golden brown.
- Remove to wire rack; cool completely.
