Barbecue Chicken Pasta Salad With Lime And Sour Cream
- 1 lb bow tie pasta
- 2 c frozen peas
- 1 c frozen corn
- 2 1/2 lb rotisserie or charcoal grilled chicken
- 1 1/2 c barbacue sauce (prefer Johnny Harris from Savannah Georgia which is a mustard based sauce)
- 1 teaspoon hot sauce
- 2 tablespoon lime juice
- 1/2 sour cream
- 2 stalks celery diced
- 1 med red onion diced
- 1 carrot cut into matchsticks
- 4 tomatoes chopped
- 1/4 c chopped fresh cilantro
- salt and ground pepper to taste
- 1. cook pasta according to directions and in the last 2 minutes add peas and corn,stirring to make sure that they dont clump together
- 2. drain pasta then transfer to a rimmed pasta sheet. spread into an even layer to dry
- 3. pull apart chicken meat, chop large pieces into bite size pieces
- 4. in large bowl,wisk together barbacue sauce, hot sauce and lime juice. add chicken and toss to coat
- 5. in a second large bowl combine the sour cream, pasta and vegtable mixture,celery, red onion, carrot and tomatoes. Fold in the chicken and cilantro, mixing until just combined. season with salt and pepper
