Pancakes With Taste!

  1. In a large bowl whisk together the flour, sugar, baking powder, salt, nutmeg and, cinnamon.
  2. In a medium bowl whisk together the eggs, milk, vanilla, almond extract and, melted butter.
  3. Stir the liquid ingredients into the dry until a batter forms.
  4. Let the batter sit 10 minutes (it will become "fluffy" due to the chemical reaction of the baking powder and salt and this is what will give these pancakes their incredible texture).
  5. Heat a griddle or non-stick skillet over medium heat and brush with some oil (NOT olive oil).
  6. Add the batter by 1/4 cup portions and cook about 3 to 4 minutes per side.
  7. Place on a serving platter and serve with butter, syrup or fresh fruit preserves
