Spicy Court Bouillon
- 1 lb mahi mahi fillets (blood line removed)
- 1 yellow onion, chopped
- 5 green onions, thinly sliced
- 2 medium shallots, diced
- 2 cloves garlic, crushed
- 1 can 14 oz. good quality tomato sauce - progresso
- 3/4 c. parsley, chopped
- 1 T fresh thyme or 1 tsp dried
- 1/2c - 3/4c. water
- juice of 1 lemon
- a few drops of scotch bonnet pepper sauce or pinch of red pepper flakes
- cooked rice
- Over medium low heat, cook onions, green onions, shallots and garlic until translucent, about 15 minutes. Add tomato sauce, parsley, thyme and hot sauce. Simmer for 15 minutes. Stir in water and add mahi fillets -- cover pan and simmer 3-4 minutes, turn fillets and simmer an additional 3 minutes. Remove from heat. Add lemon juice. Serve over rice.
