Sesame Stir Fry
- 1 1/2 cups vegetable broth
- 3/4 cup long-grain white rice, uncooked
- 1 T butter
- 1 T sesame seeds
- 2 T peanut oil
- 1/2 lb asparagus, trimmed and cut into 1" pieces
- l large bell pepper in 1" pieces
- l large yellow onion, sliced
- 2 cups sliced mushrooms
- 2 teas minced fresh ginger root
- 1 teas minced garlic
- 3 T soy sauce
- 1 T sesame oil
- Preheat oven 350. Combine butter, rice and broth in saucepan and cover. Allow it to come to a boil on high. turn the heat to low and let it simmer for 15 min. until liquid is absorbed.
- Brown sesame seed in baking pan in oven for 5 min.
- Put peanut oil in wok and stir fry all ingred. Put sesame oil and seeds in last and serve over rice.
