Thin Crust Pizza
- Dough:
- 1 envelope dry yeast
- 1/4 tsp sugar
- 3/4 cup warm water
- 1 3/4 cups unbleached flour
- 1/2 tsp salt
- Toppings
- 1/3 Cup Italian blend cheese or Parm
- 1/3 cup fresh basil
- 1/4-1/3 cup onion (opt)
- 1 tsp olive oil
- Sauce
- Italian style diced tomatoes OR
- Crush tomatoes w/ roasted garlic and onions
- OR
- Regular Pizza sauce - toast some anise seed and fennel seeds - grind and simmer w/ tomatoes for 20 min or so
- Combine yeast, sugar and water and let set for 10 min
- Combine the flour and salt
- Pour water/yeast mixture over flour
- Knead for few min and shape into ball
- Place in dish and find a warm place to let sit for 10 min
- Place pizza pan in oven and heat to 500
- Lay dough on floured surface and with floured rolling pin roll to desired thickness - something a bit thicker than hardcover book is just perfect for thin crust
- Pull out pan from oven and lay crust on the pan.
- Cover crust with sauce
- Add toppings, drizzle with olive oil, cover with cheese
- Place pizza pan back in oven for 10-12 minutes until cheese starts to bubble and turns slightly dark in color
