Hot Brown Sandwiches

  1. Melt butter and onions over med heat in a saucepan. When onions are translucent, whisk in the flour and cook until it smells nutty. Add the milk, salt and pepper and bring to a boil, cooking until it thickens. Cool slightly. Add two egg yolks, tempering as necessary, Parmesan cheese, and additional butter. Cook over low heat until it thickens further.
  2. Assemble sandwiches: layer turkey and tomatoes on toast. Add heavy layer of cheddar and sauce. Broil until golden brown and top with bacon
