Hot Brown Sandwiches
- 2 tbsp + 2 tsp butter
- 1/4 cup minced yellow onion
- 2 tbsp + 2 tsp flour
- 1 1/2 cups milk
- dash red pepper
- 1/2 tsp salt
- 2 egg yolks
- 1/2 cup grated Parmesan Cheese
- 1 tbsp butter
- 8 slices toast
- 1 lb cooked sliced turkey
- 8 tomato slices
- 8 crisp slices bacon
- 1/2 cup cheddar
- Melt butter and onions over med heat in a saucepan. When onions are translucent, whisk in the flour and cook until it smells nutty. Add the milk, salt and pepper and bring to a boil, cooking until it thickens. Cool slightly. Add two egg yolks, tempering as necessary, Parmesan cheese, and additional butter. Cook over low heat until it thickens further.
- Assemble sandwiches: layer turkey and tomatoes on toast. Add heavy layer of cheddar and sauce. Broil until golden brown and top with bacon
