Chicken Marbella
- 1-1/2 lbs. skinless chicken thighs (bone-in or boneless)
- 2 cloves garlic, minced
- 1 Tbl dried oregano
- 1 cup red wine
- 1/2 tsp ground white pepper
- 1 cup pitted prunes
- 1/4 cup pitted green olives (with or without pimento stuffing), drained
- 1/4 cup capers, drained
- 1/4 cup brown sugar
- 1/4 cup chopped fresh parsley
- 1/4 olive oil
- 2 Tbl lemon juice
- 1 tsp salt
- Arrange chicken thighs in a glass baking dish. Mix remaining ingredients and pour over the chicken. Cover with plastic wrap (or glass lid) and marinate 8 hours or overnight.
- Remove pan from refrigerator and let rest for an hour. Preheat oven to 350 degrees. Remove plastic wrap and cover with foil or glass lid. Bake for 45 minutes to one hour. (Bone-in thighs may take longer.)
