Sweet And Sour Pork
- 2 lb. pork
- 1/4 c. flour
- 2 Tbsp. oil
- 2 Tbsp. cornstarch
- 1/4 c. vinegar
- 3 Tbsp. chili sauce
- 1 tsp. garlic powder
- 1/4 tsp. ginger
- 1 small jar apricot jelly
- 1 small green pepper, cut in thin strips
- 1 small red pepper, cut in thin strips
- 1 can mandarin oranges, drained
- 1 can pineapple chunks, drained
- Cut pork into 1/2-inch chunks.
- Coat thoroughly with flour. Brown in skillet with oil about 5 minutes.
- Stir occasionally. Dissolve cornstarch in vinegar; stir in chili sauce, garlic powder and ginger.
- Add to pork with apricot jelly.
- Heat to boiling. Turn heat down.
- Add peppers.
- Cover and simmer 15 minutes.
- Stir in oranges and pineapple.
- Heat 2 minutes more.
