Spicy Beef And Bean Chili
- 1.5 lbs lean ground beef
- 1 tablespoon butter
- 1 large onion, chopped
- 4 celery stalks, chopped
- 3 cloves garlic, minced
- 1 quart peeled tomatoes
- 1 15 oz can chili beans
- 1 15 oz can kidney beans
- 1 15 oz can black beans
- 1 15 oz can Red Gold diced tomatos with chipotle peppers
- 4 tablespoons chili powder
- 1/2 tablespoon cumin
- 2 Jalapeno peppers, chopped
- Salt and Pepper to Taste
- Monterrey Jack Cheese (optional)
- Brown ground beef over medium heat and drain excess liquid. In a large pot, melt butter, then saute onions on medium heat for about 3 minutes. Add celery and garlic, and saute for an additional 4 minutes. Add ground beef, tomatoes, chili beans, black beans, kidney beans, and diced tomatoes. Stir until well mixed. Add chili powder and cumin. Add chopped jalapeno peppers with seeds removed. Cook on low heat for 45 minutes, covered. Add salt and pepper to taste, and serve, garnished with Monterrey Jack Cheese.
