Portuguese Pasta Fazool
- 2 medium Onions diced
- 6 slices bacon cut in 1/2 inch pieces
- 2 pounds Portuguese chorizo sausage cut in 1/2 inch slices
- 3 cans 15oz tomato sauce (must be sauce)
- 1 Tbls each salt -pepper, 2 Tbls of oregano
- 2 cans 20oz chickpeas drained
- 2lbs Ditali Pasta cooked al dente
- 1. Cook pasta al dente according to box directions then drain well & set aside
- 2. Fry bacon until crisp remove to paper towel to dry
- 3. In the bacon fat saute onions for 4-5 minutes or until onions are clear.
- 3. Add the sauce plus 1 can of water and bring to a boil.
- 4. Add the chorizo, salt, pepper and oregano then lower heat to a simmer and cook
- 50 minutes.
- 5. Drain and rinse chickpeas add to sauce and cook 10 more minutes.
- 6. Add pasta and bacon.
- 7. Cook 2 minutes, remove from heat and the gourmet meal is finished.
