Chocolate Coconut Rainforest Confections/ Candies

  1. peel and chop 1 yucca root into chunks drop in boiling water. boil until yucca is tender easily stabbed with a fork. drain in a strainer tranfer yucca to a bowl mash till smooth. then make coconut confectioners sugar by :Place the coconut sugar and arrowroot into the dry container of your Vita-Mix or coffee grinder. Place the lid on tightly. Start on low speed and gradually work your way up to the highest speed. It will take a few minutes to powder the sugar. You can start and stop the machine if you need to. Just don't open the lid or you will have powdered sugar floating everywhere in the air! The dry container of the Vita-Mix is designed to keep dry ingredients moving and not get hot and cake to the bottom of the container.
  2. Keep blending the sugar until it is all powdered and light brown in color. Keep the lid on for a few minutes to let it settle to the bottom. combine coconut confectioners sugar with yucca, coconut flakes and vanilla. drop heaping spoonfuls on wax paper. roll into balls and refigerate for 30 minutes to a hour. If mixture is too soft to refidgerate before shaping. dip in chocolate shell mix once coated lift out with tongs or fork onto wax paper or cake rack place candies in refidgerator to harden.
