Salada De Palmito (Salad With Hearts Of Palm)
- 2 large, ripe, juicy tomatoes, sliced into thin slices
- 1 14-ounce can of hearts of palm
- 1 small onion
- For the salad dressing, use the traditional olive oil and vinegar, salt and
- pepper with lemon juice, garlic powder and cayenne.
- Drain the hearts of palm and cut them into 1/4" slices.
- Peel the onions and slice them into very thin slices. Separate the slices into
- rings. Place the onions in a bowl and cover them with ice cubes and water.
- Refrigerate for 2 hours. An alternative is to sprinkle the slices with sugar (2 Tbsp)
- and refrigerate for 2 hours. When you are ready to serve them, drain the onion
- slices and rinse under cold water.
- Toss with dressing, sprinkle with salt and grind some fresh pepper over it. Serve on bed of lettuce.
