Salada De Palmito (Salad With Hearts Of Palm)

  1. For the salad dressing, use the traditional olive oil and vinegar, salt and
  2. pepper with lemon juice, garlic powder and cayenne.
  3. Drain the hearts of palm and cut them into 1/4" slices.
  4. Peel the onions and slice them into very thin slices. Separate the slices into
  5. rings. Place the onions in a bowl and cover them with ice cubes and water.
  6. Refrigerate for 2 hours. An alternative is to sprinkle the slices with sugar (2 Tbsp)
  7. and refrigerate for 2 hours. When you are ready to serve them, drain the onion
  8. slices and rinse under cold water.
  9. Toss with dressing, sprinkle with salt and grind some fresh pepper over it. Serve on bed of lettuce.
