Pork And Prawn Sesame Toasts
- 8oz lean pork
- 8oz uncooked tiger prawns, de-veined
- 4 spring onion
- 1 garlic clove
- 1 tbsp chopped fresh coriander
- 1 tbsp fish sauce
- 1 egg
- 10 slices white bread
- 3 tbsp sesame seeds
- 1/4 pint vegetable oil
- salt and pepper
- Put the pork, prawns, spring onions, garlic, coriander, fish sauce, egg and seasoning into a blender. Process for a few minutes until the ingredients blend into a fine paste.
- spread a thick layer of the paste over the bread right up to the edges. Cut off the crusts and slice each piece of bread into 4 squares or triangles.
- sprinkle generous amounts of sesame seeds over the top of each slice.
- heat the oil in a wok. Fry a few pieces of the bread, topping side down first so that the egg sets. for about 2 minutes turn over and cook for a further 1 minute or until golden brown.
- drain the toasts on paper towels, then serve with sprigs of coriander.
