Shakshouka
- 1.5 ts coriander
- 1 ts cumin
- 1.5 TB paprika
- 0.5 ts kosher salt
- 3 large garlic cloves
- 1 large poblano pepper - seeded, chopped
- 1 TB olive oil
- 2 TB tomato paste
- 3/4 cup water
- 1.5 lbs ripe tomatoes - quartered or sliced
- 4 eggs
- In 10' fry pan, brown the poblano pepper over medium heat in the oil (About 10 minutes). Combine spices and galic to make a paste. Add spice paste and tomato paste to pepper and cook, stirring until fragrant, about a minute. Stir in water and tomatoes. Cook uncovered over medium heat until tomatoes are softened, 10-20 minutes. With a spoon or spatula, make indentations in the tomato mixture. Crack an egg in each. Cover pan to cook eggs from top. Cook until eggs are set but yolks are still runny. Season eggs with salt and pepper. Serve with hummus and buttered toast or pita.
