Lemon Bars
- Bottom layer:
- 1 package Lemon Cake Mix
- 1/2 cup butter, melted
- 1 egg
- Upper layer (Frosting mixture):
- 3 1/2 cups powdered sugar
- 1 Tablespoon butter, softened
- 2 Tablespoons fresh lemon juice
- 1 slightly rounded Tablespoon fresh grated lemon peel
- 1 egg
- 1 drop yellow food coloring
- 1 8-oz. package cream cheese
- Preheat oven to 400u0b0.
- Grease bottom only of 13 x 9 x 2" baking pan.
- 1. Combine upper layer ingredients; stir until moist.
- Pat into pan.
- 2. Blend powdered sugar, butter, food coloring,
- lemon juice, and lemon peel into cream cheese.
- 3. *(Reserve 1/2 cup for frosting bars.)
- Add 1 egg to the remaining frosting mixture.
- Beat 3 to 5 minutes at high speed.
- 4. Pour over the base layer.
- 5. Bake at 350u0b0 for 40 minutes. Cool completely.
- 6. Top with the reserved icing.
- 7. Cut into bars.
- 8. Refrigerate leftovers.
