Lemon Bars

  1. Preheat oven to 400u0b0.
  2. Grease bottom only of 13 x 9 x 2" baking pan.
  3. 1. Combine upper layer ingredients; stir until moist.
  4. Pat into pan.
  5. 2. Blend powdered sugar, butter, food coloring,
  6. lemon juice, and lemon peel into cream cheese.
  7. 3. *(Reserve 1/2 cup for frosting bars.)
  8. Add 1 egg to the remaining frosting mixture.
  9. Beat 3 to 5 minutes at high speed.
  10. 4. Pour over the base layer.
  11. 5. Bake at 350u0b0 for 40 minutes. Cool completely.
  12. 6. Top with the reserved icing.
  13. 7. Cut into bars.
  14. 8. Refrigerate leftovers.
