Iowa Whoopie Pies
- 1/2 c. shortening
- 2 c. all-purpose flour
- 1 1/4 c. buttermilk or sour milk
- 1 c. sugar
- 2/3 c. unsweetened cocoa powder
- 1 egg
- Chocolate Butter Frosting
- 3/4 c. milk
- 1 tsp. baking soda
- 1/4 c. all-purpose flour
- 3/4 c. margarine
- 2 c. sifted powdered sugar
- 1 tsp. vanilla
- 1 tsp. vanilla (filling)
- For cookies, beat shortening with an electric mixer on medium speed for 30 seconds.
- Add about 1 cup flour, half the buttermilk, sugar, egg, baking soda, 1 teaspoon vanilla and 1/8 teaspoon salt. Beat until thoroughly combined.
- Beat in remaining 1 cup flour and remaining buttermilk.
- Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet.
- Bake at 350u0b0 for 8 to 10 minutes or until edges are firm.
- Cool.
