Beef Lettuce Wraps

  1. Heat a saute' pan over medium high heat. Coat pan with cooking spray. Sprinkle steak with salt and pepper. Place steak in pan; cook 5 min on each side. Remove from pan; let stand 10 min. Cut steak diagonally across the grain in to thin slices.
  2. Combine juice, soy sauce, sugar minced jalapeno in medium bowl, stirring with a whisk. Reserve 4 teaspoons juice mixture in small serving bowl. Pour remaining juice into a large bowl; add steak, tossing to coat.
  3. Combine cucumber, cilantro, carrot.
  4. Place 1 1/2 ounces beef in center of each lettuce leaf; top each with 1/4 C vegetable mix.
  5. Roll up and serve with reserved juice mixture.
