Simple Oatmeal Raisin Cookies

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and spray with nonstick spray.
  2. Process the oats into a flour using a food processor or high powered blender. Place in a mixing bowl and add cinnamon.
  3. Puree the bananas in the food processor or blender and add to the oat mixture along with the sunflower seeds, almonds and raisins. Mix until well combined.
  4. Place 1 ounce spoonfuls of the cookie dough on the baking sheet. Flatten each cookie slightly.
  5. Bake 12 minutes or until lightly browned.
  6. Makes about 15 cookies
  7. There is no flour in this recipe. The oats are ground into a flour using a food processor or high powered blender.
