Mom'S Stuffed Peppers
- 1 med. onion, chopped
- 1 clove garlice, minced
- 2 cans tomato puree
- 1 15-oz tomato paste
- 1 can tomato soup
- 1 cup water
- salt and pepper to season
- fresh or dried oregano
- 1-1/4 lbs. grass fed beef or bison
- 3/4 c bread crumbs
- 1/2 c uncooked rice
- 1 tsp. salt
- 1/4 lb. ground pork
- 1 beaten egg
- 1 med. chopped onion
- Saute onion and garlic till golden. Add tomato puree, paste, soup, water, and seasonings. Bring to boiling, simmer 1.5 hours.
- Meanwhile combine pork, bread crumbs, egg, rice, onions, and salt. Cook peppers 5 minutes and stuff with meat mixture. Place in casserole and bake at 350 for 1.5 hours, basting three or four times.
