Brown Sugar Sweet Potato Casserole
- 3 cups cooked sweet potatoes
- 1 teaspoon Kosher salt
- 1 cup sugar
- 8 tablespoons butter
- 1 teaspoon vanilla
- 2 eggs
- 1 cup light brown sugar
- 1/3 cup flour
- 1/3 cup butter
- dash fresh ground nutmeg
- dash ground cloves
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 cup pecans, coarsely chopped
- Beat mashed cooked sweet potatoes, sugar, salt, softened butter, vanilla and eggs together. Add nutmeg, cinnamon and cloves to taste. Place in greased baking dish. Mix topping ingredients together with fingers. Sprinkle over potato mixture. Bake in 350 degree oven for 1 hour.
- Notes:
- Cooked sweet potatoes can be put in a Kitchenaid whole with other ingredients for mixing.
- May be prepared ahead, with topping left off until right before serving.
