Garden Delicious
- 1 head of cauliflower, broken
- up in flowerets
- 1 bunch broccoli, broken up in flowerets
- 1 red pepper, sliced in strips
- 1 green pepper, slced in strips
- 4 cloves of garlic, minced
- 2 large onions,chopped
- 1 1/2 cups of uncoiked Basmati rice
- 3 cups of vegetable broth
- 3 tbs. of soya sauce
- 1 tbs. of dried thyme leaves
- 2 cups of cashew nut pieces
- 2 cups of medium cheddar
- 2 cups of garlic cheese (optional, if can't be found)
- 3 tbs. of peanut oil
- In a 4 quart glass casserole dish, microwave vegetable broth, half the onion and rice for 15 minutes. Rice should have absorbed the broth. If no microwave, cook in oven at 350F for half an hour. Add thyme and soya sauce, mix and set aside.
- Preset or keep oven at 350F.
- In a wok, heat oil and add peppers, cauliflower, broccoli, garlic and other half of onions. Stir fry for 5 minutes.
- Pour stir fry on top of rice mixture. Add cashews and then cheese. Cook in oven for 10 minutes (cheese should be melted). Let stand for 3 minutes.
