5 Star Gazpacho Az
- 3 pounds tomatos
- 2 peeled and chopped seeded cucumbers
- 1 chopped green bell pepper
- 1 small red onion
- 4 garlic cloves
- 1/4 cup chopped italian parsley
- 8 basil leaves
- 1 teaspoon dried basil and oregano
- 1/2 cup virgin olive oil
- 1/4 cup red wine or sherry vinegar
- 1 1/2 tablespoons Worcestershire sauce
- 2 tablespoons fresh lemon juice
- 46 ounces jar tomato juice
- 1 teaspoon salt and pepper
- 1 cup finely chopped yellow pepper, chives and parsley for garnish mixed
- toss all but tomato juice
- puree in blender in batches and transfer to large bowl
- stir in tomato juice and season with salt and pepper
- chill at least 4 hours, add garnish mix before serving
