Macaroni And Cheese
- 8oz. pk macaroni
- 1/4 C. butter
- 1/4 C. flour
- 1 t. salt
- 1/8 t. pepper
- 1 T. dry mustard
- 2 C. milk
- 2 C. (8oz) grated cheese
- 1 large tomato, sliced thickly(optional)
- Preheat oven to 375 degrees. Cook pasta according to package directions and drain well. Melt butter in medium saucepan over low heat. Remove pan from heat and stir in flour, salt, pepper and mustard until smooth. Gradually stir in milk return to medium heat and bring to boil stirring constantly,reduce heat and simmer one minute. Remove from heat and stir in 11/2 cups of cheese continue to stir until smooth. Add cheese mixture to macaroni and mix well. Pour into a greased shallow 11/2 quart casserole. Arrange tomato slices over top and sprinkle remaining cheese. Bake 15 minutes until heated through.
