Three-Cheese Quiche
- 1 small to medium chopped onion
- 3 Tbsp. butter
- 1 15-oz. container Ricotta cheese
- 1 cup light cream
- 1 cup grated cheddar cheese
- 1 1/2 cups (6 oz.) grated or sliced Swiss or Muenster cheese
- 3 eggs, slightly beaten
- 1/2 lb. bacon, coarsely chopped
- 1/4 tsp. seasoned pepper
- 1 tsp. seasoned salt
- 1 tsp. dry mustard
- 1 Tbsp. fresh or freeze-dried chives
- 2 nine-inch pie shells
- 1.trick empty shells with fork to prevent bubbling and bake at 400 for 12 minutes.
- 2.taute onion in butter until transparent. Set aside and stir in chives. Cook and drain bacon thoroughly and set aside.
- 3.tn large bowl, combine Ricotta and cheddar cheese, eggs, cream, salt, pepper, and dry mustard. Crumble bacon and stir in with onion mixture.
- 4.tine pastry shells with the Swiss or Muenster cheese. Pour in filling and bake at 350 for 50 minutes. Garnish with paprika and parsley, if desired.
