1915 Firehouse Cheesecake
- Crust
- 2 Cups Graham Cracker Crumbs
- 1 Cup Sugar
- 1 Teaspoon Cinnamon
- 1/2 Cup Butter
- Mix all ingredients and press into a 9" spring form pan and bake for 7 minutes at 350.
- 1 1/2 Pounds Cream Cheese
- 1 Cup Heavy Cream
- 4 Eggs
- 1/2 Cup Sugar
- 1/2 Teaspoon Salt
- 1/3 Cup Flour
- 1/4 Cup Fresh Lemon Juice
- Grated Peel of 1 Lemon (Yellow part only)
- In the bowl of an electric mixer fitted with the paddle attachment, mix cream cheese and cream until smooth. With mixer running add eggs, one at a time, until well incorporated. Add sugar, salt , flour, lemon juice and peel and mix well.
- Pour into crust and bake at 350 for 1 hour or until middle of cake is set. Turn off oven, open oven door all the way and allow cake to cool slowly in oven.
- Serve with fresh berries or fruit.
