Grilled Shrimp With Mango Salsa
- 32 large shrimp, pre-cooked
- Coating:
- 1 c. shredded coconut
- 1/4 c. olive oil
- 1 c. bread crumbs
- 2 minced garlic cloves
- 1/4 c. chopped fresh parsley
- 1/2 lemon, juiced
- 1 t. salt
- 1 t. pepper
- Salsa:
- 1 mango
- 1-15 oz. can mixed tropical fruit, cut smaller
- 2 T. cilantro, minced
- 1 scallion, chopped
- 1/2 lime, juiced
- 1 jalepeno, seeded and diced
- salt
- Soak 8 skewers in water 30 minutes. Place coconut on baking sheet and bake at 350 for 10 minutes or until brown. Remove and cool 5 minutes. Place shrimp in oil and toss to cover. Combine coating ingredients and coat each piece well. Chill 30 minutes. Preheat grill to high. Thread shrimp on skewers and grill 2 minutes each side. Serve with salsa.
