Grilled Shrimp With Mango Salsa

  1. Soak 8 skewers in water 30 minutes. Place coconut on baking sheet and bake at 350 for 10 minutes or until brown. Remove and cool 5 minutes. Place shrimp in oil and toss to cover. Combine coating ingredients and coat each piece well. Chill 30 minutes. Preheat grill to high. Thread shrimp on skewers and grill 2 minutes each side. Serve with salsa.
