Baba'S Walnut Cake
- 12 eggs separated
- 3 tablespoons flour
- 12 oz. sugar
- 12 oz. English ground walnuts
- Icing
- 6 eggs
- 8 oz. Baker's sweet chocolate
- 8 oz. sugar
- 8 oz. sweet butter (unsalted)
- 1. In a large bowl, mix the sugar and egg yolks (separate the whites in a separate bowl) until it turns a pale yellow color and becomes creamy.
- 2. Add flour and ground nuts to batter.
- 3. Beat the egg whites until stiff and fold into the batter.
- 4. Bake in a moderate oven (350 degrees) in 2 cake pans for around 40 minutes.
- ICING
- 1. Mix eggs and sugar.
- 2. Stir over slow fire until smooth and thick (must be done very slowly).
- 3. Add chocolate, which you have melted in the oven (no water), or you can add it bit by bit into the egg/sugar mixture.
- 4. Mix butter and add the above mixture.
- 5. If you like, add a teaspoon of coffee to the hot mixture, or add more ground nuts.
