Steak Salad With Black Pepper/Blue Cheese Bites
- 1 head romaine lettuce cleaned and cut into bite sized pieces
- 3 cups arugula cleaned and cut into bite sized pieces
- 1 cup cut cherry tomatoes
- 1 pound of your favorite steak pan fried or grilled and cooled
- 1 cup crumbled blue cheese
- 2 Black Pepper Croccantini crackers
- 1/2 cup red wine
- 3 tablespoons lemon juice
- 2 tablespoons honey
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 cup olive oil
- For Vinaigrette: In a blender, mix red wine vinegar, lemon juice, honey, salt and pepper.
- Once combined, slowly add olive oil while blender is on until emulsified.
- In a small bowl, crush the croccantini and stir in blue cheese until coated.
- In a bowl, combine the romaine and arugula, and toss with 1/4 cup of the dressing.
- To serve, top salad with sliced steak, blue cheese bites, and broken Croccantnini and enjoy!
