Spicy Black Bean Patties
- 1/2 medium onion, chopped
- 4 cloves garlic, pressed
- 1/2 sweet potato, about 5 oz, peeled and grated, yielding about 1 cup
- 1 15 oz can black beans, drained and rinsed
- olive oil
- 1/2 teaspoon hot sauce
- 1 teaspoon ground cumin
- 1 large egg
- 1/4 cup dried breadcrumbs or panko
- salt and chipotle pepper to taste
- 1) Preheat broiler. Adjust top rack to 4-6 inches from element. Line a cookie sheet with foil sprayed with a little cooking spray.
- 2) Place the drained black beans in a medium bowl.
- 3) In a large skillet, fry the onion in a little oil for one minute. Add the garlic, hot sauce and cumin. Stir 30 seconds. Remove from heat and add to black beans.
- 4) Mash up most of beans and mix in onion.
- 5) Beat egg and add to beans, along with grated sweet potato and breadcrumbs.
- 6) Form into 4 good sized patties, placing on prepared cookie sheet.
- 7) Broil 8 to 10 minutes until crisped and golden brown, flip carefully and broil another 2-3 minutes.
